How to brew different types of tea

Last week I took an awesome class through Laneway Learning called The Art of Tea Brewing, Flag & Spearhosted by the lovely Cheryl from . And it got me thinking that a big reason more people probably don’t enjoy tea is because they haven’t had it made properly. There’s actually a bit more to it than pouring boiled water into a mug and throwing in a tea bag, and there’s a hell of a lot more to it than those stale black tea bags your nanna has in the back of the pantry.

I thought I’d do a quick run through of a few different types of tea this morning, and how to brew them, based not only on some of what I learned last week, but also from what I’ve learned making and drinking tea around the world, so that you get the best tasting cup possible!

*** I will preface this guide by saying that you should always check the instructions on your tea first, as they may specify the exact time and temperate for steeping – this guide is more a general rule of thumb for the most popular types of tea. I also generally use one heaped teaspoon of loose-leaf tea to make one cup, 2 heaped teaspoons to make a 500ml pot. ***

 

Black tea

Why drink it: For a great, caffeine-lighter alternative to coffee as a morning or afternoon pick-me-up, and for benefits that include digestive tract health and lower stress levels.
Water temperature:
Boiling water, 100°C. This is the exception to “it’s not all just boiling water” rule.
How long to steep: Depending on how strong you like it, around 3 – 6 minutes.
Favourites: Storm In A Teacup’s Breakfast Tea is my all-time go to. Also adore Fortnum & Mason’s Royal Blend for an afternoon cup,  Clement & Pekoe’s Assam Leaf Corramore for a morning cup, and English Tea Shop’s Organic English Breakfast tea bags when I can’t use a teapot.

 

White tea

Why drink it: To help with everything from oral health to anti-aging to diabetic symptom relief – it’s a versatile one.
Water temperature:
 Around 80°C.
How long to steep: 2 – 5minutes
Favourites: I’ve actually never gotten into white tea, so if you have any recommendations, I’d love to know!!

 

Green tea


Why drink it: Green tea is packed with antioxidants, will still give you a bit of a caffeine kick, and reputedly has benefits ranging from reducing the risk of cardiovascular disease to improving brain function.
Water temperature: Around 60 – 75°C. A very basic rule of thumb is to fill about a quarter of the cup or pot with cold water, the rest with boiling water.
How long to steep: Again, it can vary so check the specific tea’s instructions, but generally only a minute or two, otherwise it can get quite bitter. You’ll also find some green teas can be infused two or three times, but you’ll only need 10 – 30 seconds for the second infusion.
Favourites: Ippodo’s Genmaicha is a delicious blend of green tea with toasted rice, Storm In A Tea Cup’s Matcha Laced Sencha is a great way to try matcha without going the whole hog, Twining’s Lemon Drizzle is a delicious special treat cup, and my absolute favourite (and splurge purchase) tea is Ippoddo’s Mantoku Gyokuro, which is just heaven in a cup.

 

Rooibos tea

Why drink it: Because rooibos is caffeine-free, it’s the perfect option to drink at night – it’s also packed full of antioxidants, and helps support strong bones with higher levels of manganese, calcium and fluoride. 
Water temperature:
 90 – 100°C.
How long to steep: 5 – 7 minutes.
Favourites: The Old Tea Shop’s Rooibos Caramel, and T2 Tea’s Red Green Vanilla

 

Oolong tea

Why drink it: Not quite as high in caffeine as black tea, this drop is reported to help increase metabolism (therefore aiding in weight loss), and decreases inflammation. 
Water temperature:
 80 – 100°C.
How long to steep: 3 – 5 minutes – this is another one that can deal with multiple infusions, which are often said to get better as they go.
Favourites: Wall & Keogh’s Milk Oolong and The Spice & Tea Exchange’s Coconut Oolong

 

Herbal tea

Why drink it: Herbal tea benefits are almost unending – it all depends on what kind of herbs you go with! Herbal teas can be used to help in everything from detoxing the body from harmful nasties, helping to de-stress you before bed, assisting in healthy pregnancies and energising you before a big day.
Water temperature:
 100°C.
How long to steep: 5 – 8 minutes. Herbal tea is also great to cold steep for iced tea – just add cold water instead of boiling water, and steep it in the fridge overnight.
Favourites: T2 Tea’s Mint Mix makes an awesome iced tea as an alternative to plain boring water, Yarra Valley Chocolaterie’s Cocoa Tea Relax is a delicious dessert tea, and Monique’s Apothecary’s detox.me is amazing to help get your liver and kidneys working properly again.

Around The World In 15 Tea Shops

When one spends 4 months travelling the world with the majority of that time spent in beautiful (but freezing cold) winter cities, one must drink a hell of a lot of tea to keep warm!

While it might not be hard to find somewhere to get yourself a cup of tea (or coffee, for that matter) – hello, Starbucks – a true tea shop is a thing of beauty. It’s always a lot more calm and pleasant than a chain hurry-up-and-caffeinate-me outlet, the customers are much happier to slow down/stop completely, and in winter especially, there’s no where better to cosy up for a timeout from the cold. For me, personally, the tea shop signifies a retreat and sanctuary; I’m an anxiety-afflicted introvert, and I like nothing more than tucking myself away into a corner with a pot of tea and a book or my journal. So having travelled non-stop for 4 months, the tea shop stops were like a signal for my mind to calm down and decompress.

Needless to say, there were many tea shops visited while we were away, but some stood out more than others; here’s a little compendium of my favourites 🙂 Oh, and not all of them are your traditional sit down and order shops – I’ve listed a few where you can buy the tea without sitting down to drink a pot first.

1. Clement & Pekoe, Dublin, Ireland

Visit: Creaky old wooden floor boards, lovely helpful staff who are more than happy to recommend a brew, delicious scones with jam, and that general warm, cosy, homely feel you want from your Irish tea shops!
Variety: 50+ teas to choose from.
Try: Assam ‘Corramore’ – a 2nd flush Assam that makes for an indulgent morning cuppa.

Visit: London’s oldest tea shop and Twinings flag shop store, the narrow walls are lined with bag and loose leaf teas from the Twinings range. You can purchase boxes of tea, or just single tea bags if you want to sample a few flavours. And as a bonus, there’s a teeny tiny ‘museum’ at the back of the store!
Varieties: just about everything Twinings makes… which is a LOT of variety!
Try: The salted caramel green tea… wow…

Visit: This beautiful tea house sits overlooking the water in the middle of the gardens, and they offer a simple tea ceremony; you can have your matcha with or without a typical Japanese sweet, and you can buy some to take home with you.

4. Fortnum & Mason, London, UK

Visit: When in London… I couldn’t leave without taking high tea, and the Fortnum & Mason Tea Salon was perfect. Their tea salon menu is quite extensive, and most of their teas are available to purchase after you’ve stuffed yourself full of finger sandwiches and scones. Excellent quality tea, and exceptional service.
Variety: 50+ teas.
Try: I loved the Royal Blend for a good, rich black tea – yup, took a bag of that home, too.

5. Alice’s Tea Cup, New York City, USA

Visit: An Alice in Wonderland themed cafe, they have the a deliciously extravagant variety of sweets served up by the friendliest staff to go with the brilliant tea collection. And you can buy after you’ve tried, by weight.
Varieties: 50+ to choose from.
Try: Mauritius black tea with a hint of vanilla, and of course their signature Alice’s tea, a blend of Indian black and Japanese green teas with rose petals and berries.

6. Le Valentin, Paris, France

Visit: Tucked away in one of the city’s undercover walking streets, this little bakery is one of the best places to do tea in Paris. The selection of cakes kind of necessitates more than one visit, as does the tea list. And if you’re not sure what to pair with your cake, just ask one of the lovely staff for a recommendation.
Varieties: I can’t find a menu online for a definitive number, but there were a few dozen from what I remember.
Try: A classic Earl Grey pairs up pretty well with a lot of the sweets.

7. Ippodo Tea, Tokyo, Japan

Visit: The Tokyo store has the added bonus of  tea room on site, so you can sample some of the teas before you shop. It’s all quite a hands-on experience, where you’ll be taught the intricacies of brewing the tea youve chosen, so you’ll know exactly what to do at home.
Varieties: 30+ green teas.
Try: Mantoku Gyukuro green tea.

Visit: We actually didn’t get the chance to visit the tea house itself, because we found them set up at one of the Christmas market we went to! They had a pretty impressive range for a market stall, though, so I imagine there’d have been even more to choose from in store. You can order online, though, which is nifty!
Varieties: Around 200 teas.
Try: I went with the Bourbon Orange Christmas Tea, because it reminded me so much of the mulled wine we drank at the markets!

9. The Spice & Tea Exchange, New Orleans, USA

Visit: This isn’t unique to New Orleans – there actually heaps of stores scattered around the United States. It just so happens this is where I first found them! Along with tea, they also have a heap of different herbs, salts, spices, salts, seasonings and oils – it’s a gourmand’s heaven. The New Orleans store itself is cosy and welcoming, with very knowledgeable staff for when you just can’t choose.
Varieties: 50+ teas.
Try: Coconut oolong.

10. McNulty’s Tea & Coffee, New York City, USA

Visit: This is one of the most perfect little tea shops you’ll ever find. Hidden in plain sight, it’s like stepping back in time. It’s organised chaos as you navigate through cardboard boxes on the floor and dozens of glass jars on the benches. And the smell is absolutely extraordinary! And if, like me, it all gets too much and too overwhelming, help is on hand to help you pick the perfect leaves.
Varieties: Hundreds!
Try: I love the Golden Assam Khongea Estate for a rich black tea.

11. Da Rosa, Paris, France

Visit: We found this place utterly by chance, when one afternoon in Saint Germain, we were getting tired and needed a rest stop. We turned down a street and saw this place, and it looked too warm and cosy to pass up on a frosty winter’s day! Mr José Da Rosa’s establishment is a gourmet grocer/bar/tea house where he offers teas of his own creation (after being certified as a tea master). And if tea isn’t your thing, there’s always beer and wine!
Varieties: A dozen or so (for now).
Try: No.13 mint & green tea.

12. Wall & Keogh, Dublin, Ireland

Visit: This was the sort of place that would be my regular if I lived in the area – a gorgeous little nook downstairs has space to get comfy and read, write, drink and catch up withy friends. Upstairs hosts a tiny café so you can be fed as well as watered, and the staff were some of the nicest and most knowledgeable I’ve ever come across.
Variety: 150+ blends
Try: I took some coconut milk mate and some milk oolong – both phenomenal!

Eating the city: New York City, USA

In a city as big as New York and a stomach that can only physically expand so much, it’s impossible to eat everything. So, in order to save precious gut real estate for the good stuff, let me run you down the goodies you need to save space for when you visit.

 

1. Walnut chocolate chip cookie from Levain Bakery
Multiple locations

Not particularly cheap at USD$4.00 but they’re the size of grapefruit, FULL of melty chocolatey and nutty goodness, and can you really put a price on happiness? If you want to eat in, get there early or prepare to wait around – it’s a tiny space, so it fills up and the line ends up out the door pretty fast!

2. Patrami & mustard on rye from Katz’s Deli

This is one of the classics of NYC, and there’s a good reason for that. Family run for several generations, they’ve served everyone from Harry & Sally to NYC Mayor de Blasio and Senator Bernie Sanders (I know that because they were sitting at the table next to us a few weeks ago!). And if the USD$22.00 price tag puts you off a little, remember how much you’d pay for that much meat at a BBQ place – just because its between bread doesn’t mean you’re not getting your money’s worth!

Brooklyn’s amazing, but even if it wasn’t, it’d still be worth going to just to get your pie fix from these guys. They have a sweet little pie shop on a street corner, with a chalkboard hanging over the counter announcing the day’s offerings (around USD$6.00 per slice), and REAL tea and coffee to go with it!

This is the bagel dreams are made of, in whatever combination you decide on. I can’t go past the scallion cream cheese, and while it’s damn near impossible to narrow down the fish, I’d strongly recommend the cured Scottish salmon and the smoked sable. Prices vary depending on your fish, but they’re kind enough to slice off a bit for you to taste before you commit.

Two NYC stalwarts, two great dogs. From Papaya King you’ll be wanting the two hot dogs with sauerkraut & mustard and a papaya drink combo. I wasn’t sold on the papaya juice drink with a hot dog, but its actually a weirdly good combination! And at Nathan’s, you just want a dog with a little ketchup and mustard. Amazing!

7. Tea and scones at Alice’s Tea Cup

I’m a big fan of Alice, so I was stoked to find this wasnt a completely tacky themed cafe. They do breakfast and lunch, too, but I was there for tea and sweets. You can get a large pot (6 cups) of tea with two scones of your choice (they have a rotating selection daily) for USD$20.00, and they’ve cleverly switched to a tip-included-in-the-price system to make things even easier. Selecting you tea is the hard part, with dozens to choose from – I like the Mauritius black tea with a hint of vanilla, and of course their signature Alice’s tea; you can also purchase any tea from their menu to take home!

8. Deli sandwich near Sunset Park, Brooklyn

It doesn’t really matter where you get it from or what’s in it, the whole walk up 5th Avenue to Sunset Park is lined with these little delis. It’s a bit of a climb to the top of the park, so grab some sandwiches on fresh bread piled high with just-sliced deli meats for a picnic in a spot that overlooks the Manhattan skyline.

 

9. Noodles and dim sum in Chinatown

Let’s be honest; where there’s a Chinatown, there’s good food. And New York’s is no different. Get yourself over there and just start walking. It’s just like being in Asia, which means the menus are often difficult to decipher, and there are more options than you’ll know what to do with. And, it’s cheap. Enjoy!

 

10. New York Cheesecake from Eileen’s Special Cheesecake

Because how can you possibly go to New York without trying the namesake cheesecake?! You can get a little personal one for yourself (USD$5.00), or a nice big one to share (or, for yourself, no judgement), and in all sorts of flavours as well as the original.

They say necessity is the mother of invention, and a gap in the market for halal food in NYC led to one of the city’s greatest creations in the Halal Guys. The meat (served street side from a cart) is probably better than any you’ve had in a restaurant, and starting at around USD$8.00 for a platter, you won’t even need dinner later!

I’m a real burger lover, and my two NYC favourites fall on both ends of the spectrum. 3. English Tea Shop tea
What’s it all about? Organic, fair trade and utterly delicious, these are my favourite tea bag teas. I go through a 20 pack box of English Breakfast tea probably every 6 weeks or so, and I’m also in love with the lemongrass, citrus and ginger first thing in the morning.
Buy it for: The tea lovers who care about what goes into their tea, and where it comes from.

4. The Old Tea Shop almond & vanilla tea
What’s it all about? One of my favourite places to buy tea from, the range is enormous (over 200 different types), the gem scones baked on site are fantastic, and you can order online if you don’t have time to get to Warburton. My favourite is the almond and vanilla black tea.
Buy it for: Again, everyone – with over 200 teas to choose from, it shouldn’t be too hard!

5. Target glass teapot
What’s it all about? I’ve always wanted a glass teapot, and when I found this one for around $20 at Target, I jumped at it – there’s something beautiful about watching the tea infuse…
Buy it for: The tea lovers who have every other type of teapot.

6. The Spice & Tea Exchange coconut oolong tea
What’s it all about? Hands down the best non-black tea I’ve ever had. Found it in New Orleans and just found out I can order it online to be delivered to my door! It’s the most incredible coconut, woody, fresh flavour, get on it!
Buy it for: An alternative to the standard black or green tea options.

7. Op shop tea accessories
What’s it all about? Underrated way of shopping for tea accessories; hit the op shops and see what you can find! I got that teapot at an op shop for $10, and the vintage cup and saucer for around $15, and they’re my favourites in my big collection because they’re the two pieces that really have soul 🙂
Buy it for: The special tea loving hipster in your life.

Cook this: T2 Lamington Tea porridge

Monday morning, ready to take on another week! But not without a good breakfast. And this one is an absolute beauty. But before I get to that, let me explain how the ridiculous idea of making porridge with a cup of tea came about. I stumbled on a great find last week in the Extraordinary Routines site. This project, put together by Madeleine Dore, is exploring the daily routines of creatives such as writers, artists, designers and other who “bring a unique spirit to the world around them.” It’s really interesting to read how these successful and happy people run their days, and has some fantastic inspiration if you’re looking for a bit of a change!

Being food-minded though, it wasn’t long before the RECIPES menu caught my eye. The first image I saw was what looked to be a pretty little bowl of porridge or overnight oats or something, so I clicked on that to find myself face to face with a recipe for earl grey porridge. Sorry, WHAT?!

It’s no secret that I love my tea. As you may be able to tell from the picture above: that’s all of the tea. No, that’s a lie – there’s more in the pantry And more tea cups and mugs. So many more.  I also love oats, in just about any form. So the idea of combining these two of my favourite things? Yup. All sorts of yup.

I mentioned this earl grey porridge idea to husband, to which he replied, “I bet it’d taste good with that Lamington tea you’re so obsessed with at the moment.” Damn, why didn’t I think of that?! Done deal! I love T2’s teas (their Melbourne Breakfast is a HUGE favourite in our house), but they’ve really outdone themselves with their Lamington Tea; as you can see below, it’s a gorgeous black tea with coconut flakes, cocoa nibs and tiny little chocolate drops. Heaven!

I’m sure whatever the recipe on the site was was perfectly good, but I didn’t actually bother reading it. Once I’d seen the title, I figured I’d be able to get it right myself. And surprisingly, I actually did (not all of my ideas work out so well)! Here’s how you can make your own bowl of lamington porridge breakfast happiness..

For one bowl of porridge, you’ll need:
– 1 cup of tea. T2’s Lamington is perfect for this, but if you don’t have any/can’t be bothered buying any, just use your favourite black tea. Brew it with ¾ cup boiling water, steep for a few minutes, then mix it ½ cup milk.
– ½ cup rolled oats
– Toppings of choice – I used a few raspberries, crushed toasted almonds, shredded coconut and toasted cacao nibs

 

To cook it:
1. Combine the tea and oats in a pot over medium heat. Bring to boiling point, then reduce heat to a simmer and cook, stirring constantly, until porridge reaches your desired consistency. Serve immediately with your toppings of choice.

A one step recipe. So simple. So delicious. It’s also the perfect starter meal for the day for me, being gluten and lactose free (I use almond milk), as well as low FODMAPs. So much stomach can’t bitch up later on. And just to get a bit more tea in, I made a cup of the English Tea Shop’s organic green tea to go along with it.That, my friends, is the way to breakfast.

First up though, let me tell you about the deliciousness you can see above these sentences, at Alice’s Tea Cup in New York.

I found this place by chance after a random Google search for a good afternoon tea spot in NYC. I love tea and scones (#secretnanna), and figured it’d be freezing cold in the city while we were there and my evil plan was that at some point husband would be like “damn it’s cold, could use a hot drink” and I’d be like “oh, great, I know just the place” and would be all “just follow me!” and lead us right here! It didn’t go exactly like that (I was the one who complained about the cold first this particular day), but we did get here, and it was amazing…

Alice’s Tea Cup actually has a few stores (chapters) in the city, and as the name implies, it’s a bit of a cutesy, whimsical, Alice-In-Wonderland themed tea nook. Yeah, it’s pretty girly, and I usually don’t go for that stuff at all, but I’m a bit Alice In Wonderland fan and I love tea and scones, so I made an exception just this once! They do everything (literally – breakfast, brunch, lunch, dinner AND high tea), all day long. And to say that the tea list is impressive is a wild understatement – as you can see from their website, they cover every single one of your tea needs!

We went late at night, around 7.30pm, and decided on a pot of tea to share, along with a chocolate chip scone and a buttermilk scone, which came out with jam and cream. The scones were nice and soft, a little crumbly, but the jam and cream held it all together beautifully. I’d have loved to have done the high tea there as well… maybe next time 🙂 The service was really wonderful too, despite being close to closing time, and the floor staff looked after each and every table with the same bright smiles and warm chatter.

The tea we ordered was the house special, “Alice’s tea,” an interesting blend of both black (Indian black vanilla) and green (Japanese) teas, with rose petals – it had another strong aroma that I can’t quite place right now.. maybe bergamot? Anyone else tried this tea and can remember? Anyway, it’s a beautifully smooth tea with plenty of flavour, I absolutely loved it. I asked our server if it was available to buy; all of the tea on the menu is available to purchase and take home! I grabbed a small pouch and am brewing a small pot for myself right now, actually. It drinks well both as is, and with a little milk (which is my preference), and is perfect on a colder day.

With three “chapters” around NYC (102 West 73rd St., 156 East 64th St. and 220 East 81st St.), the most enticing display of cakes and scones, the most thorough tea list I’ve ever seen, which you can take home with you, and such lovely staff, there’s really no reason not to visit!
